Raw chocolate
Surrender into the pleasure and nourishment of raw chocolate.  Raw cacao is a goddess superfood and should be consumed with gratitude for the beautiful energy and love that seems to enter our bodies with every bite.  Below is a simple recipe that tastes decadent with sliced strawberries, which are finally just in season as we transition into Spring.
Ingredients:
3 cups raw organic walnuts
15 raw organic medjool dates, pitted
4 heaping tablespoons raw cacao powder
1 teaspoon vanilla dash sea salt dash water as needed Chopped walnuts and/or cocao nibs for topping

Directions:
Place all ingredients into food processor.  
Blend.  Add only enough water to make a dryish doughy consistency.  Add more dates, cacao powder, vanilla and salt as needed for flavor.  Spoon out into brownie pan and spread mixture until about 1/2"-3/4"thick.  Sprinkle nibs and walnuts on top and press into dough.  Place in freezer until set, maybe 30 minutes.  
Cut into 1"x1" pieces and arrange on plate.

 Makes a beautiful dish garnished with
strawberries and mint leaves.



A delicious and highly nutritious Mediterranean Kale Salad

Ingredients:
4 leaves Kale
1 head lettuce of your choice       
4-6 sun-dried tomatoes, soaked
1 tomato
1 avocado
15-20 olives
Handful mint leaves
Handful pine nuts  
Olive oil, balsamic vinegar
Sea Salt to taste

Directions:
Wash lettuce and Kale in a bowl of cold water. 
Lift the greens out of the water. 
The dirt will sink to the bottom. 
Rinse until  free of dirt and sand. 
Chop lettuce into very small pieces and place in salad bowl. 
Slice out stems from Kale and roll Kale leaves like newspaper. 
Slice Kale into 1/4 inch think pieces, add to salad. 
Dice tomato, sun-dried tomatoes, avocado, and olives and add to salad. 
Add a pinch of sea salt and a handful of pine nuts. 
Toss with olive oil, balsamic vinegar, or a dressing of your choice when ready to serve. 
As an option, add grilled chicken, salmon, or steak.
